Not only is a zucchini gluten-free, but it also low in carbs and packed with vitamins. Come summertime, we constantly use it in place of pasta in order to cut calories from meals and add vegetables. It couldn’t be easier, and trust me, you won’t even notice that you aren’t eating pasta.
- Wash a zucchini.
- Using a Zucchini Peeler, grate zucchini. Stop grating once you reach the seeds.
- Sautee zucchini in a skillet in olive oil until warm (only a minute or two).
- Serve with your favorite sauce or serve with our stuffed banana peppers.
