Pan Seared Mahi-Mahi Easy Recipe

We have had a couple of submissions to Photo-Worthy Food that have featured Pan-Seared Mahi-Mahi.  So, I thought it was only appropriate that we put out a recipe for our followers.  I developed this recipe as a tribute to what was served to me while visiting the “Street Party” in St. Lucia.  It’s my best guess as to how the fish was prepared on this beautiful island.  The recipe is actually quite simple.  You can have this dish whipped up in no time at all.  The biggest obstacle in creating this meal is to obtain a piece of high-quality fish.  I served this Mahi-Mahi with a sun-dried tomato risotto.  You could also serve with rice and black beans like they did in the Caribbean.

Fresh fish is so easy to make. Adding this marinade will make it even better. Be careful to not overcook your fish. Buy your fish fresh and keep it on ice when transporting home.

Ingredients
  • 2 Mahi-Mahi Filets
  • ¼ Cup Olive Oil
  • ¼ Cup Dry White Wine (Sauvignon Blanc or Pinot Grigio)
  • 2 Tbsp Lemon Juice
  • 2 Cloves Garlic, Pressed
  • 6 Sprigs of Cilantro
  • A Couple of Twists of Fresh Ground Pepper
  • Dash of Salt
Instructions
  1. Combine all ingredients other than the fish in the blender.
  2. Puree ingredients in blender.
  3. Place fish in a casserole bowl to marinate.
  4. Add blended ingredients, place in fridge and marinate for 1 hour.
  5. Heat your cast iron skillet over medium-high heat.
  6. Spray skillet lightly with olive oil.
  7. Add fish and cook until well seared (dark brown). Be sure to cover the skillet or else your fish won't cook through.
  8. Be sure to baste fish continuously with leftover marinade.
  9. Flip and repeat process.
  10. Fish will be done when it starts to flake easily approximately 8-10 min per inch of thickness.
  11. Serve with risotto and garnish with extra cilantro.
